Stir fried beef with broccoli

Ingredients:
500 grams beef thinly sliced
(refer to photo)
750 grams broccoli florets
2 tablespoons fish sauce
1 tablespoon dry sherry or
white wine
1 tablespoon corn flour
1/2 cup cold water
1 tablespoon light soy sauce
2 tablespoons vegetable oil
salt and pepper to taste

Preparation:
Cut the beef with a sharp knife into thin slices (refer to photo). Season beef with salt and pepper. Add 2 tablespoons fish sauce and 1 tablespoon dry sherry or white wine. Mix well together. Cover and allow to marinate for 15-30 minutes.
Heat up 2 tablespoons of vegetable oil in a wok or similar saucepan. Stir fry the marinated beef slices including the marinade, until the beef is cooked and light golden in colour. Add the broccoli florets and stir in with the beef. Cover and allow to simmer for 10-15 minutes or until the broccoli is cooked. Stir at intervals to ensure even cooking. Do not overcook the broccoli. Add a little bit of hot water if the sauce is not liquid enough. Uncover if sauce is too liquid and allow liquid to evaporate.
Taste sauce. Season with salt and pepper to your preference.
Mix the corn flour in 1/2 cup of cold water. Add 1 tablespoon of light soy sauce. Mix well and set aside.
Add the corn flour, light soy sauce and water mixture to the beef and broccoli. Stir gently together and mix well. Allow to cook until the sauce thickens.
Transfer to a warmed serving dish. Serve immediately and eat with rice. Enjoy.
