Snake beans with pork stir fry

Ingredients:
800 grams snake beans,
500 grams smoked bacon or pork,
1 tablespoon white vinegar,
1 tablespoon light soy sauce,
3 tablespoons fish sauce,
2-3 tablespoons oyster sauce,
1 teaspoon corn flour,
3 tablespoons vegetable oil,
1 tablespoon finely crushed garlic,
1 tablespoon finely crushed ginger,
2 spring onions finely chopped,
Salt and pepper to taste,
3 red chillies sliced lengthwise (or to taste).

Preparation:
Cut the smoked bacon/pork into bite size pieces. Season with 1 tablespoon light soy sauce, 2 tablespoons fish sauce, salt and pepper. Mix well and allow to marinate.
Wash the snake beans. Cut off the end bits. Cut into bite lengths (5 cms) with a sharp knife and put aside.
Mix the vinegar, 1 tablespoon fish sauce and 2 tablespoons oyster sauce together in a separate container. Put aside.
Pour enough water in a large saucepan for the blanching of the green beans, with 2 tablespoons salt. Allow water to boil. Put cut snake beans in boiling water. Allow water to start boiling again. Blanch the snake beans cut pieces for two minutes. Remove the snake beans from the boiling water and immerse into running cold water to stop the cooking. The snake beans will turn into a vibrant green colour. Drain and put aside.
Put 3 tablespoons vegetable oil in your wok or saucepan on medium high heat. When the oil starts to sizzle, stir fry the sliced red chillies, crushed garlic and ginger, followed by the smoked bacon/pork pieces. Stir at intervals, allow the smoked bacon/pork pieces to cook thoroughly and turn into a light golden brown colour.
Add the snake beans pieces and gently mix with the smoked bacon/pork pieces. Add the vinegar, fish and oyster sauce mix. Mix gently to incorporate with the meat and snake bean pieces. Cover and allow to cook over medium heat until the sauce starts forming and the snake beans are fully cooked and tender. Uncover and allow to simmer until the sauce thickens to your desired consistency. If sauce is too thin, you can thicken by adding one teaspoon of corn flour dissolved in a little bit of water. Mix well.
Transfer onto a warm serving plate and sprinkle with the finely chopped spring onions.
Enjoy with rice.
