Pain perdu french toast

Ingredients:
8 slices white bread (baguettes)
125 grams butter
100 grams granulated sugar
250 ml milk
4 eggs
25 grams vanilla sugar

Preparation:
Clarify the butter, place it in a small saucepan and cook slowly until a residue forms and sinks to the bottom. remove from from the heat and strain off the clear yellow liquid above to use for the frying.
Bring the milk to the boil, with the sugar and vanilla sugar. Pour into a basin.
Beat the eggs well in another container.
Diagonally slice the baguette as shown in photo.
Slowly pour the clarified butter into a frying pan large enough to hold 4 slices of bread, placed over medium heat. Quickly dip each slice of bread first in the milk and then in the beaten eggs, making sure both sides are covered. Then put into the hot butter. Fry one side then turn it over. It should take about 3-4 minutes. Remove the bread with a spatula and place on serving dish. Pour in the rest of the clarified butter gradually and fry the remaining bread slices.
Serve immediately. You may sprinkle the bread with sugar and serve it with fruit purée or apricot jam. Ideal for breakfast.
